Friday, November 16, 2012. Oven baked Eggplant Parmesan. I improvised this recipe from Martha Stewart. Because I wanted to put the Eggplant over pasta, not in a casserole. Olive oil or cooking spray, for baking sheets. 1/2 cup plain dry breadcrumbs. 1/2 cup finely grated Parmesan. 1 teaspoon dried oregano. 1/2 teaspoon dried basil. Coarse salt and ground pepper. 1 large eggplants, sliced into 1/2-inch rounds. Fresh sliced shredded mozzarella. Thursday, November 8, 2012. 1 bunch (about 6 ounces) kale.
