基於能滿足需求之最低供應量的立場,當時的營養研究非常強調 必需性 ,也就是 不吃或吃得不夠會造成缺乏性疾病與症狀 ,才可列入 必需營養素 的範疇。 在台灣,行政院衛生署於1970年代也提出了 飲食指南 與 飲食指標。 另一方面,學者也探討可降低慢性病風險的 食物種類 與 飲食型態 ,期望找出可以預防慢性疾病的 成份 與作用機制。 其中芬蘭長達八年的ATBC癌症預防研究,對象是2 萬9133名50 69歲吸菸者,竟然發現補充β胡蘿蔔素反而增加肺癌發生率 補充α生育醇未增加肺癌或其他癌症發生率,但增加出血性腦中風發生率,卻也降低攝護腺癌發生率。 另一方面,可以降低疾病風險的飲食類型介入實驗,大多有正面結果,包括地中海型飲食與 得舒 飲食 dietaryapproaches to stop hypertension, DASH。 這種飲食的內容是豐富而多量的植物性食物 穀類、蔬菜、水果、豆類、堅果與橄欖 ,以橄欖油為油脂,適量至高量的魚類與海鮮,適量的蛋、禽肉與乳製品 乳酪與優格 ,同時以適量紅酒佐餐,但很少吃紅肉與肉製品。 以 整體飲食 預防慢性疾病的概念逐漸被世界各國納入 飲食指引 當中。
