With July 4th just around the corner, here’s an easy vege recipe to utilize those grills (or oven if you don’t have a grill accessible): spicy mexican corn. Ingredients (makes 4 servings):. 4 ears of corn. 2 tablespoons of paprika. 2 tablespoons of cayenne pepper. 2 teaspoons of salt. 4 tablespoons of cojita cheese (can omit if want). Grill/roast corn for 20-30 minutes / until corn kernels are soft / cooked.

Somewhat in honor of Cinco de Mayo and because I had a can of coke lying around in my fridge that I was wondering what to do with, I decided to try my hand at making some carnitas for the base of my tacos: carnitas tacos. Ingredients (makes 3-4 servings):. 2 pounds pork butt/shoulder, trimmed and cut into 3 x 3 in chunks. 4 cups light olive oil (for frying). 2 cups orange juice. 2 teaspoons Mexican oregano.

Testing out new recipes on my husband and kids. Friday, December 4, 2009. Hot Hoagies and Chicken Enchilada Pasta. Links to this post. Monday, March 9, 2009. 2 Tbs Olive oil. 1/2 large onion (diced). 5 button mushrooms (sliced). 1-2 cloves garlic (minced). 1 Italian zucchini (sliced). Salt and pepper to taste. 1 tsp dried basil. 1 Tbs Olive oil. 1 can Fire Roasted diced tomatoes. Sprinkling of Parmesan cheese. Cook in the oven for 15 minutes or until fish is flaky. Sprinkle Parmesan cheese over the top.
