Rice pudding is one of my most favorite things to eat. I absolutely LOVE it! I found this recipe a while ago, gave it a try and this is by far my most FAVORITE one. I know the picture of it looks a little strange. But trust me, this stuff is AWESOME! 1 cup uncooked rice (I use long grain). 1 cup unsweetened coconut milk. 2 1/2 cups flour.

Sunday, December 18, 2011. 6 bacon strips, diced. 1 small onion, diced. 3 ribs celery, sliced. 6 medium potatoes, peeled and cued. 2 carrots, peeled and sliced. Reduce heat; add onion mixtures, carrots, potatoes, salt and pepper. Cook for 10 minutes or until heated through. I top mine with some chopped bacon and shredded cheese. I made Clam Chowder (for my hubby) and Bacon Potato Chowder for the rest of the family. 1/4 cup chopped bacon (I had some leftover from breakfast this morning). 1 small onion, chopped. 3 (65 ounce) cans minced clams. Dash or 2 of pepper.
