There’s a lot of Chefs out there teaching classes that have really impressive biographies – Trained in France, Cooked for Royalty, Got in a fist-fight with Mario Batali over Risotto – I’m not one of them. I’ve been cooking, either at home or in professional kitchens for longer than I’d like to admit (okay, 25 years! What this has ingrained in me is the ability to cook excellent food at home, on a budget, from scratch, all the while my wife and I raise our family and both work full-time.
