Tonight we took some of the pre-cooked chicken from a few nights ago, and the pre-cooked spaghetti squash and made Pad Thai. The first thing is to make the sunshine sauce. This will be mixed into the Pad Thai and give it the nutty, coconut, spicy flavoring. 1 clove garlic (minced). 1/2t crushed red pepper flakes. 1tb coconut aminos (or any type of aminos) I used Bragg's which is a veggy blend of aminos*. 1/4 cup sunflower seed butter (I used almond butter). Dash of cayenne pepper. 1/4 cup coconut milk.
