In 2002, Cat discovered a little bit of heaven: Puerto Morelos, in the Yucatan Peninsula, Mexico. She made it her home, lhe launched a successful dive shop and built four houses. I call myself a food diplomat she says changing thousands of people’s perception of Mexican food and its wonderful people. Catriona Brown was also a finalist as Entrepreneur of the Year at the 2012 for the International Association of Culinary Professionals conference in New York. Here in Mexico where it's warm year-round, cooking outside in the fresh air, over open flame has reached perfection. First you'll make 3-4 different kinds of salsas and learn how to use them. To me, guacamole is the perfect addition to lots of dishes from a basic crab salad or bruschetta to a variety of Mexican dishes such as quesadillas, it also makes for a great dip for nachos or crisps! 2 x ripe avocados. 1/2 x red onion diced. 1 x serrano chilli (2 if you like a bit more spice) de-seeded and chopped.
