This was my first attempt at butternut squash soup, and I was pretty pleased with it! 1 medium butternut squash, halved lengthwise and seeded. 1 large sweet potato, peeled and rough-chopped. 1 cup baby carrots. 1 large onion, rough-chopped. 1 stalk celery, peeled to remove the stringy bits. 32 oz chicken broth. 2 tsp curry powder. Cayenne pepper, to taste. Salt and pepper, to taste. Sour cream, shredded Parmesan, and bacon crumbles, for garnish.

I have been pretty slammed at work and we also finished up a month of the Game on Diet again so my creativity in the kitchen has been limited. My friend posted her recipe for Butternut Squash Soup on her blog. And it looked good. It was a very cool autumn day today and so I thought I would give it a try. It is awesome!
