Monday Night Knit Club. We can do it! Friday, January 15, 2010. Ginger Snap Cookie Recipe. 1/4 cup plus 2 tbsp butter softened. 2 tsp baking soda. 2 tsp ground ginger. 1 tsp ground cinnamon. Beat sugar and butter together on medium speed until blended. Add molasses and egg, beat well. Combine dry ingredients in separate bowl and add gradually to sugar mixture.
