First Stop in our world tour! 2/3 c Red lentils. 1 inch piece ginger, grated. 4 tbs Vegetable oil. 1 tbs Ground coriander. 4 medium Green bell peppers. 1 1/4 c Water. 1 tsp Cumin seeds. 2 Onions, chopped. 2 tbs Chopped cilantro. Afghan Potato Salad with Cilantro Dressing. Pound Russet potatoes, cut in half. Cup roughly chopped scallions, white and light green parts. 1 cup roughly chopped cilantro (1 small bunch). 1/3 cup plus 1 tbsp. white wine vinegar. Leave a Reply Cancel reply.

I served this tofu sauteed in a pan with a little bit of olive oil, balsamic and garlic powder. It was great! I made a little bit of extra tofu and ate it like you would eat potato chips.
