Pre-Heat oven to 375°F.Cream together butter, both sugars and peanut butter. Add 1 egg and vanilla. Add flour, baking soda and salt. Form in walnut size balls. Southwest Chicken and Rice Bake. 1 Rotisserie Chicken, deboned and roughly chopped (Savory Slow-Roasted). 1 1/2 c. instant white rice, uncooked. 1 jar (16 oz) mild picante sauce. 1 can (11oz) corn and peppers. 2 can (10oz each) red enchilada sauce. 1 can (15 oz) black beans, drained and rinsed. 1 pkg (8oz) mexican style shredded cheese, divided. Preheat oven to 400*. Spray 13x9 baking dish with cooking spray. Spread mixture evenly into baking dish and top with remaining cheese.

Wednesday, July 27, 2011. 2- 15 oz cans black-eyed peas, drained. 1- 15 oz can whole kernel corn, drained. 1- 10 oz can Ro-Tel tomatoes. 2 c chopped red bell pepper. 1/2 c chopped fresh jalapeno peppers. 1/2 c chopped onions. 1- 8oz bottle Italian Salad Dressing. 1- 4 oz jar chopped pimentos, drained. Combine all ingredients in a large bowl, stir gently to combine, and refrigerate overnight. Serve with corn or tortilla chips. This recipe will keep in refrigerator for up to 2 weeks. 1 Can Refried Beans.
