You have two options: Boston butt or a fresh picnic . The Boston butt and the fresh picnic come from the pork shoulder which is part of the front leg of the pig. When the shoulder is cut into two roasts you get the Boston butt and the fresh picnic. There are pros and cons to using a picnic or Boston butt. So which one is best? I could not pass that up.
