Monday, 7 November 2011. Spinach and feta filo pie and mixed tomato salad. I'm adding spinach to everything at the moment in a desperate attempt to up my iron, this is one of my favourites :). 1 pack of ready made filo. 1 large bag of spinach. 1 pack of feta. A large handful of pecan nuts, crushed. The juice of half a lemon. A selection of tomatoes, I had red and yellow cherries and baby plums. Pan fry the spinach, then mix in a bowl with crumbled feta and the pecans and the lemon juice. Fun with the bix.

Still tastes yummy though :D. 1 white onion diced. 1 tbs beef gravy granules (I use bisto as its vegetarian, but it makes the quorn taste a bit meatier). 8 dumplings (feel free to make from scratch, I went for packet mix cos this is a lazy dinner! Monday, 1 September 2008. Tiger Prawn stirfry with Spinach noodles. This dish is a nice spicy filling yet light meal which is quick and very easy to do! Tiger Prawns- I used 10 per person as I love them. 2 tea spoon peanut butter. You can use fresh or frozen Tiger prawns, I used frozen ones today so I defrosted them under running cool water before starting the stir fry. Place a pan with water to boil for the noodles. Squeeze in a two wedges of lime. Throw in the cashew nuts. Add soy sauce and seasoning.

Sunday, 19 October 2008. It may look like meat but its not! Lasagna is another dish you can make in many different ways. Being vegetarian i often just make one with veggies and cheese but today I decided to make one more traditional but I replaced the beef with quorn mince instead. It looks like meat, tastes so great even my hubby to be doesn't mind the meat not being real meat! 2 cloves of garlic. 1/4 aubergine, chopped in small cubes. 1/2 red bell pepper, chopped into small pieces. 1 chopped red onion.

Saturday, 19 November 2011. Mozzarella, tomato and pesto tart. 350g ready roll puff pastry. 1 punnet of cherry plum tomatoes. 1 ball of mozzarella. Sea salt and black pepper. Super easy and quick, preheat the oven the 200, roll the pastry out then leaving a 2 cm gap around the edge cover the base with the pesto. Monday, 30 June 2008. Wholegrain Spaghetti with Aubergine, Chili and Ricotta. I make this for dinner at least once a fortnight. Its really chunky and substantial and you can mess around with the ingredients quite a bit. I thought it would be a good introduction to spaghetti for Isla and the large chunks of vegetables were perfect for baby hands to grab. I added only half the amount of chili as stated below in case it was too hot for her but I prefer mine with a bit more bite. 400g of Wholegrain Spaghetti.

Monday, 7 November 2011. 125g soft unsalted butter. Half a teaspoon real vanilla extract. Approximately 2 tablespoons milk. Preheat the oven to 200C and line the tin with the muffin cases. It couldn't be simpler to make cup cakes: just put all the ingredients except for the milk in the processor and then blitz till smooth.
