The greatest WordPress.com site in all the land! I personally think that the squash is sweet enough on its own and does not need any more sweeteners or calories. I kept it real simple. 2 T Olive oil. Salt and Pepper to taste. I baked it at 400 degrees for about 35 minutes, and it seemed to be cooking a little too fast, so I turned the oven down to 360 degrees and baked it for about 15 minutes more. Every Mangalorean household may have it's own twist. It is very simple to make too. I like dishes that are quick to prepare and yummy to devour. 1 tbsp Kashmiri red chili powder (I did not have it at hand so used 2 tsp regular hot red chili powder- Kashmiri chili powder will give you a nice paste and won't be super hot).
