Friday, February 22, 2008. 2 cups caned peach slices, drained. 2/3 cup ground almonds. 14 oz packet traditional English teacake mix. 3 oz butter, softened. 1/3 cup apricot jam. Preheat oven to 350 F. Grease and line a 8 inch round cake pan. Arrange peaches in pan. Sprinkle with 2 tablespoons almonds. Using an electric mixer, beat cake mix, eggs, butter and milk until combined. Chargrilled Sponge Cake with Poached Mandarins. 1 cup caster sugar. 4 mandarins, peeled. 8 1/2 inch-thick slices Sponge cake. 1 1/2 tbs butter, melted. 1/2 cup double cream, to serve. Place the syrup over high heat and bring to the boil. Boil, uncovered, without stirring, for 5 minutes or until the liquid reduces by half. To serve, divide the cake and mandarins among serving bowls. Drizzle with the syrup and serve with a dollop of the double cream. The Dessert Guys Store.

Monday, February 25, 2008. Spiced Cranberry Poached Pears. 6 cups cranberry juice. 2 cinnamon sticks, broken. 1 vanilla bean, split. 1 tsp ground star anise. 6 firm, ripe pears. Place cranberry juice, sugar, cinnamon sticks, vanilla bean and star anise in a large, shallow saucepan. Stir over a low heat until sugar dissolves. Simmer, uncovered, for 10 minutes. Transfer pears to serving plates with a slotted spoon. Spoon over some of the syrup and serve with cream, if desired. The Dessert Guys Store.

Microwave on Medium/50% power, stirring every minute until they are fully melted. Spoon the melted chocolate into a sealable plastic bag and snip one corner of the bag to make a piping bag. Pipe enough white chocolate on top of the biscuits, allow to drip down the side to resemble custard flowing over the pudding.
