Delicate yet Decadent Kedjeree – The Travelling Pantry
https://thetravellingpantry.com/2015/07/02/delicate-yet-decadent-kedjeree
Adventurous, Honest and Wholesome. Delicate yet Decadent Kedjeree. I’ve always seen kedjeree as a jumble of ingredients, like the food equivalent of a jamboree.a jazzy festival of flavours, a fabulous brunch, hearty and ‘Sunday snooze inducing’. Kedgeree is the kind of dish that lends itself to lazy weekend, lazy late breakfasts. Not much effort is required to deliver such delicious results. 320g smoked haddock (undid if you can get it). 180g lightly smoked salmon fillet. 1 dried red chilli. Rinse rice w...

Cheese gougères (cheese puffs) | Project Pastry
https://projectpastry.wordpress.com/2014/10/12/cheese-gougeres-cheese-puffs
The path to perfect pastry. Cheese gougères (cheese puffs). October 12, 2014. So this is a bit off curriculum (not non-laminated viennoiserie this weekend) but it was my friend’s wedding celebration on Saturday night and I was on co-catering duties. These friends, who I go back about 18 years with, got married in Canada a couple of months back but many of us were unable to attend. However, they taste absolutely delicious – crispy, cheesy outside and soft airy inside. 1 portion choux dough. Make the choux...

Passionfruit curd pavlova | Project Pastry
https://projectpastry.wordpress.com/2015/12/09/passionfruit-curd-pavlova
The path to perfect pastry. December 9, 2015. It’s been a crazy couple of weeks, so I’m a bit behind with my posting. The main reason is because we are on the final countdown before our 9-month sabbatical and this weekend I’m going to be packing up my kitchen. However, with family here from the UK, I couldn’t resist making a classic pavlova over the weekend. I say classic, but this recipe from Neil Perry is anything but! Neil Perry’s Passionfruit Pavlova. 315g eggwhites (about 10). 1 tsp lime juice.

Empanadas | Project Pastry
https://projectpastry.wordpress.com/2016/01/22/empanadas
The path to perfect pastry. January 22, 2016. Snacking on fried cheese empanadas alongside a pisco sour. We’ve been in Chile for nearly three weeks now, and at our home in Valparaiso for two. I’ve been dying to get baking again, but have a few obstacles in my way – namely, a lack of gear and an oven without a temperature gauge on it. Found all around South America, empanadas are pastry parcels either fried (. Or oven baked (. The Chilean speciality is. As the locals would say. Once I get settled in a ful...

Malteser cake | Project Pastry
https://projectpastry.wordpress.com/2015/11/08/malteser-cake
The path to perfect pastry. November 8, 2015. November 8, 2015. Wednesday was my husband’s birthday and I always try to do something a bit extra special for his celebration cake. I asked him what flavour he wanted, and received the reply sponge-flavoured . I decided to try a different approach and asked him what his favourite chocolate bar was, knowing automatically that his cake would be some kind of spin on chocolate. I used Ovaltine for the malted chocolate drink, but you could also consider Milo.

The path to perfect pastry. May 21, 2016. Chipas are small, baked, cheese-flavoured buns that taste very similar to French gougeres. 8211; crunchy on the outside and chewy in the middle. They are incredibly popular in Argentina, and can be enjoyed at any time of the day although mostly for either breakfast or a mid-morning snack. We used to pop down to the local baker during breaks from Spanish classes in Bariloche, and grab a batch fresh from the oven. Their main ingredient is. Parmesan cheese, grated.
